Semolina Caramel Halwa



1 cup – sooji (fine) (semolina)
1 cup – sugar
1 cup – ghee
1 tsp – cardamom powder
cashewnuts and raisins for garnishing




Add water to sooji and mix thoroughly without lumps to get a batter consistency.
Set aside for 30 minutes. In the meantime, in a non-stick pan, fry the cashewnuts and raisins in a little ghee and set aside.
In the same pan, roast the sugar(1 cup) in ghee(1 cup), till it becomes brown.
Now add the sooji batter stirring continuously to avoid lumps.
Keep stirring till the mixtures leaves the sides of the pan.
Now add the fried cashewnuts and raisins and cardamom powder and mix well.
Pour this mixture onto a well-greased plate.
Cut into squares when cool.
